Barrel aged Wild Ale with Lychee Fruit This complex aperitif-style beer began life as a strong blonde ale, aged one year in French oak chardonnay barrels with the wild yeast strain Brettanomyces. At six months, whole lychee fruit was added to referment in the barrels. At just over one year of age the beer was blended and primed with champagne yeast for a high, snappy carbonation level. Big tropical fruit nose with hints of white grape, some perceived sweetness on the palate with lots of lychee and passionfruit flavors, and an austere finish with a hint of tartness and clean oak. Brewed as the nuptial beer for the wedding of CBC Brewmaster Will and his Bride, Cindy. Cheers!
