My brewing philosophy @ CBC may be a little hard to put neatly into a soundbite-sized blurb. I strive to honor both the art and the science of brewing, the ingredients in every batch of beer we brew, and the people who drink it. My goal is to produce, by hand, small batches of beer which reflect this mindfulness, and which instill in the drinker a true sense of the character of CBC – artisanal, personal beers which complement the inherently social experience of spending time with friends and enjoying life via great food, drink, and discourse. I have always been as interested in the creative process as I have the created product. In this sense, brewing is much like great jazz music. A strong background is required for both, in tradition, history, and technique. It is only with this knowledge of “the rules” that the individual can express himself in a personal, improvisational, unique way, knowing how far he can bend the rules yet still maintain a contextual reference to the original form.

Throughout the year we brew dozens of different beers. In addition to our exceptional year-round offerings we feature Seasonal Ales for Winter, Spring, Summer, and Fall. Beyond those are the many single-batch beers we brew, many of them just once a year (if you miss visiting CBC for a few weeks, you just might miss the chance to enjoy some great ones!). Our repertoire includes interpretations of world-classic beer styles, from English bitters and strong Scotch ales to German wheat beers to any of the myriad brews from Belgium and beyond. It also includes experimental beers, which hearken back to Medieval Europe or Ancient Samaria, and those which look forward in an attempt to create new beers with flavors and complexities never before experienced. I strongly feel that I enjoy the second greatest career in the world (darn those Ferrari test-drivers!), and it is in that spirit that I invite you to peruse casually or plumb the depths of our beer archives, and experience, if only virtually, many of our past and future creations.
